Sweet Potato Brownies

This is the perfect treat when you are craving a brownie but do not want the stomach ache that comes with most store bought brownies. Sweet potato adds in extra fiber and is a wonderful complex carbohydrate. I hope you enjoy them!

How to make these brownies:

Ingredients:

~ 1 medium sweet potato peeled and cut into chunks

~ 1 cup brown rice flour (gf)

~ 1/2 cup sunflower butter

~ 1/4 cup coconut sugar

~ 2 tbsp. Raw honey

~ 1/2 cup unsweetened cacao powder

~ 1 tsp. Vanilla extract

~ 1/2 hu chocolate bar

~ 1/2 tsp. Sea salt

~ 1 tbsp. Melted butter or coconut oil

~ 2 tbsp. Water if batter is dry***

Directions:

1. Boil sweet potato until soft, mash it up in a bowl.

2. Preheat oven to 350.

3. Add the rest of your ingredients to a mixing bowl, along with your mashed sweet potato.

4. Transfer into a 9x13 pan.

5. Bake for 13-15 minutes.

6. While it cools make frosting!

Frosting: 1/2 chocolate bar melted, 1/2 cup plain coconut yogurt, 1/4 cup water, 1 scoop protein powder… mix together!

7. Add frosting to the top & fresh raspberries! Enjoy ❤️
