Pumpkin Banana Bread

Bay’s Chocolate Chip Pumpkin Banana Bread …

This bread is so good. I used maple syrup for the sweetener, did you know any sugar is still sugar so yes this is definitely labeled under the “sweet treat” category. Let me know if you try this pumpkin bread!


Ingredients:

1/2 cup pumpkin puree

2 mashed ripe bananas

1/2 cup unsweetened canned coconut milk

3/4 cup protein powder (I used sprout living)

3/4 cup organic maple syrup

1 & 1/2 cup organic oats (onedegreeoats)

1 organic pasture raised egg

4 tablespoons butter melted*

2 tablespoons unsweetened cacao powder

1 teaspoon baking powder

1/4 teaspoon Celtic salt

1 teaspoon vanilla extract

1/2 cup dark chocolate chips


How to Make:

  1. Mix all ingredients in a bowl

  2. Preheat oven to 350 degrees

  3. Pour batter into a 9x13 loaf pan and grease pan with butter

  4. Bake for 29-34 minutes ( I did 32 minutes)

  5. Sprinkle salt on top & let cool

  6. Drizzle sunflower butter & sprinkle blueberries on top

  7. Enjoy!!!

**Hot tip I would recommend enjoying a slice of this after a healthy protein rich meal and a short walk to prevent a blood sugar spike.
