Plantain Chips & Guac

Plantain chips and guacamole dip

Okay so something about me is that I love a chip and guacamole moment. I am trying to eat as minimally processed foods as I can, so I found a way to enjoy chips made at home!

You will need:

  • 2 plantains

  • 2 tsbp. Butter

  • 2 tbsp. Sea salt

  • 3 tbsp. Parsley

  • 1 Avocado

  • 1 tbsp. Hemp seeds

  • 1/3 cup plain coconut yogurt or Greek yogurt

  • 1/2 tbsp. Lime juice

    How to make:

    1. Preheat oven to 350 & slice your plantains very thin. Place onto a baking sheet.

    2. Melt butter and drizzle it over your plantain slices. Sprinkle 1 tbsp. Of sea salt evenly.

    3. Place into the oven for 20 minutes!

    4. While those cook, slice and mash your avocado with the rest of the parsley, salt, lime juice, yogurt & hemp seeds.

    5. Take the chips out of the oven when they are golden brown & enjoy with your guacamole.
