Pumpkin Protein Pancakes !!! 🍁🫶🏼🥞

I cracked the code on the perfect high protein pumpkin pancake recipe…. I will be making these all season.

For the batter:

1 cup organic pumpkin purée

1/2 cup pumpkin seed protein powder @sproutliving

2 eggs and 1 egg white

1/2 cup milk of choice (I used raw dairy)

1/2 mashed banana

2 tbsp. cacao powder

1 tbsp. chia seeds

1 tbsp. flax seeds

2 tbsp. maple syrup

1 tsp. vanilla extract

1 tsp. cinnamon

*mix all ingredients together* cook on cast iron skillet, grease pan with grass fed butter or coconut oil, scoop 1/3 cup of batter onto skillet, cook on low/medium heat for 5-6 minutes per side!

It’s all about the toppings baby:

1 tsp. coconut flakes

1/4 sliced banana

1 tap. unsweetened cocoa nibs

1 tbsp. wild blueberries

1 tbsp. coconut yogurt

1 tsp. homemade raspberry jam

dash of maple syrup 🍁🤍
