Soup That Doesn’t Suck

I love soup. I think some people tend to think soup is boring but not when you add herbs. I used cilantro, rosemary, thyme and oregano to pack plenty of flavor into each bite of soup.

Make this recipe your own, by adding some fun additions. This is truly just the base for a perfect nourishing soup (that doesn’t suck). I snuck in a ton of vegetables as well. Did you know we are supposed to be eating 50 grams of fiber a day????

Ingredients:

1 tablespoon of grass fed butter

1 yellow onion *chopped

1 clove of garlic *minced

6 stalks of celery *diced

7 small/medium carrots *chopped

4 salad turnips *chopped

1/4 cup *chopped kohlrabi

1/4 cup *chopped cilantro

1 cup of Swiss chard or arugula

1/4 cup of purple cabbage *chopped

1/4 cup of unsweetened canned coconut milk

1 pound of lean, cooked grass fed beef *

6 cups of kettle & fire or homemade bone broth

Herb blend:

1 tablespoon of grated ginger

1 tablespoon oregano

1 teaspoon of Celtic salt

1 teaspoon of rosemary

1 tablespoon Mediterranean herb blend (I use Wayzata Bay Brand)

1/2 teaspoon curry powder

1/4 teaspoon Ceylon cinnamon

How to Make:

  1. Chop all vegetables. I use a vegetable chopper (linked here).

  2. Place a large pot on your stove with 1 tablespoon of grass fed butter.

  3. Add in onion and garlic. Let cook for 5 minutes.

  4. Then add in celery and carrots. Toss in a splash of bone broth.

  5. Add in the rest of the vegetables and 1 cup of bone broth. Leave on medium heat for 10 minutes.

  6. Add in your herb mixture!

  7. Add in the rest of your bone broth (5 cups) and coconut milk. Then, turn heat to low, medium.

  8. Then add in your cooked ground beef and let simmer for 10-30 minutes.

  9. Enjoy!!!
