Gingerbread Loaf

You would never know that this is gluten free. The blackstrap molasses adds a perfect burnt caramel flavor and the brown butter truly brings this loaf together. You must try this for your next holiday brunch or just because you want a sweet treat!

Ingredients:

  • 3 medium ripe bananas mashed

  • 2 eggs

  • 1/2 cup coconut sugar

  • 1/4 cup of pure maple syrup

  • 1 tablespoon of blackstrap molasses

  • 1 cup & 3/4 cup of GF brown rice flour

  • 1/2 teaspoon cloves

  • 1/2 teaspoon cinnamon

  • 1 teaspoon of salt

  • 1/2 teaspoon of baking powder

  • 1/2 teaspoon of baking soda

  • 2 scoops vanilla bone broth protein @equip

  • 1 teaspoon vanilla extract

  • 1/3 cup of butter (I browned mine)

How to Make:

  1. Preheat your oven to 350 degrees.

  2. Add bananas, flour, spices, baking powder & soda and protein powder into a bowl. Set aside.

  3. Now Brown the butter: add your butter into a pan and heat on medium. Let the butter start to foam and crackle. It will begin to turn golden brown.

  4. Add your browned butter into a different bowl with vanilla, maple syrup, coconut sugar, 2 eggs and blackstrap molasses.

  5. Then add your dry ingredients into your wet ingredients.

  6. Stir until well combined.

  7. Grease or line a 9x5 loaf pan with @ifyoucare parchment paper.

  8. Pour your batter into your pan.

  9. Bake at 350 for 30-38 minutes (depending on how golden brown you want it to be).

  10. Let cool & drizzle sunflower butter over the top, enjoy!

  11. HOT TIP: pair with a form of protein or go for a nice walk after enjoying a slice of this.
