Gingerbread Loaf
You would never know that this is gluten free. The blackstrap molasses adds a perfect burnt caramel flavor and the brown butter truly brings this loaf together. You must try this for your next holiday brunch or just because you want a sweet treat!
Ingredients:
3 medium ripe bananas mashed
2 eggs
1/2 cup coconut sugar
1/4 cup of pure maple syrup
1 tablespoon of blackstrap molasses
1 cup & 3/4 cup of GF brown rice flour
1/2 teaspoon cloves
1/2 teaspoon cinnamon
1 teaspoon of salt
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
2 scoops vanilla bone broth protein @equip
1 teaspoon vanilla extract
1/3 cup of butter (I browned mine)
How to Make:
Preheat your oven to 350 degrees.
Add bananas, flour, spices, baking powder & soda and protein powder into a bowl. Set aside.
Now Brown the butter: add your butter into a pan and heat on medium. Let the butter start to foam and crackle. It will begin to turn golden brown.
Add your browned butter into a different bowl with vanilla, maple syrup, coconut sugar, 2 eggs and blackstrap molasses.
Then add your dry ingredients into your wet ingredients.
Stir until well combined.
Grease or line a 9x5 loaf pan with @ifyoucare parchment paper.
Pour your batter into your pan.
Bake at 350 for 30-38 minutes (depending on how golden brown you want it to be).
Let cool & drizzle sunflower butter over the top, enjoy!
HOT TIP: pair with a form of protein or go for a nice walk after enjoying a slice of this.
