Roasted Beet Dish

RESTAURANT REMAKE… ROASTED BEETS!

I ordered these from Maranda in Wayzata, MN & they were divine so I thought let me remake at home :)

What you’ll need:

- 4 medium sized beets

- 1/4 cup cilantro

- 1/4 cup wild blueberries

- Celtic salt

- 1 tsp. Fresh garlic minced

- 1 lime *juiced

- 2 small avocados

- jalapeños *optional

Here’s how I did it:

1. Bring 4 cups of water to a boil

2. Add in your beets, boil for 30-35 minutes or until tender

3. Rinse under cool water and peel/rub the skin off

4. Chop them up into about 1/2 inch cubes

5. Set your beets off to the side & sprinkle some Celtic salt on them

6. Combine your avocado, garlic, cilantro, lime & about 1/4 tsp of Celtic salt

7. Layer the avocado mixture onto the side of your dish

8. Place the beets on top of the mixture. Add the blueberries & jalapeños on top & a little extra cilantro

9. Enjoy 💘
